Here’s a straightforward recipe for a delicious Mediterranean Baked Fish:


🐟 Mediterranean Baked Fish

🛒 Ingredients:

  • 4 fish fillets (like cod, halibut, snapper, or tilapia)

  • 2 tbsp olive oil

  • 1 lemon (zested and sliced)

  • 2 cloves garlic, minced

  • 1 pint cherry tomatoes, halved

  • 1/2 cup Kalamata olives, pitted and halved

  • 1/4 cup capers (optional)

  • 1 small red onion, thinly sliced

  • 1 tsp dried oregano or Italian seasoning

  • Salt and freshly ground black pepper

  • Fresh parsley or basil for garnish


👩‍🍳 Instructions:

  1. Preheat oven to 400°F (200°C).
    Lightly grease a baking dish or line with parchment.

  2. Prepare the fish:
    Pat fish fillets dry, season with salt, pepper, and half the lemon zest.

  3. Assemble in baking dish:
    Place fish in the dish. Scatter cherry tomatoes, olives, capers, garlic, and onion around and on top of the fish.
    Drizzle with olive oil and sprinkle with oregano and remaining lemon zest.
    Lay lemon slices over the fish.

  4. Bake:
    Bake uncovered for 15–20 minutes, until fish flakes easily with a fork and tomatoes are soft.

  5. Garnish and serve:
    Sprinkle fresh parsley or basil on top before serving.
    Serve with crusty bread, rice, or a fresh green salad.


🔄 Variations:

  • Add sliced bell peppers or zucchini for extra veggies.

  • Swap lemon for lime and add a bit of chili flakes for a spicy twist.

  • Use fresh herbs like thyme or rosemary instead of oregano.
