Meatball Stroganoff with Dreamy Cream Sauce is a cozy, flavorful twist on the classic beef stroganoff โ€” but made with juicy meatballs and smothered in a creamy, savory mushroom gravy. It’s rich, comforting, and perfect over egg noodles, mashed potatoes, or rice.

๐Ÿ›’ Ingredients:

For the Meatballs (or use frozen for a shortcut):

  • 1 lb ground beef (or beef + pork mix)

  • 1/4 cup breadcrumbs

  • 1 egg

  • 2 tbsp grated onion (or 1 tsp onion powder)

  • 2 cloves garlic, minced

  • Salt & pepper, to taste

  • 1 tsp Worcestershire sauce (optional)

For the Dreamy Stroganoff Sauce:

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • 8 oz mushrooms, sliced

  • 2 tbsp all-purpose flour

  • 1 1/2 cups beef broth

  • 1/2 cup sour cream

  • 1/4 cup heavy cream (or more sour cream)

  • 1 tbsp Dijon mustard (optional, for a tangy kick)

  • Salt & pepper, to taste

  • Fresh parsley, for garnish

๐Ÿ”น Step 1: Make the meatballs

  1. Mix all meatball ingredients in a bowl.

  2. Roll into 1-inch balls.

  3. Brown in a skillet with a bit of oil until golden on all sides (donโ€™t worry if theyโ€™re not fully cooked inside โ€” theyโ€™ll finish in the sauce).

  4. Remove and set aside.

Shortcut: use pre-cooked frozen meatballs and skip this step!


๐Ÿ”น Step 2: Make the creamy stroganoff sauce

  1. In the same pan, melt butter + olive oil over medium heat.

  2. Sautรฉ onions for 3โ€“4 minutes until soft.

  3. Add garlic and mushrooms; cook until browned and tender (6โ€“8 minutes).

  4. Sprinkle in flour, stir, and cook for 1 minute (this thickens the sauce).

  5. Gradually whisk in beef broth. Stir well to avoid lumps.

  6. Simmer for 2โ€“3 minutes until slightly thickened.


๐Ÿ”น Step 3: Add the creamy goodness

  1. Stir in sour cream, heavy cream, and Dijon mustard.

  2. Season with salt and pepper to taste.

  3. Return meatballs to the pan, cover, and simmer on low for 10โ€“15 minutes, until meatballs are cooked through and the sauce is creamy and rich.

  • Buttered egg noodles (classic!)

  • Mashed potatoes

  • Rice or cauliflower rice

  • Crusty bread to mop up the sauce
