For the crust:

1. Make the crust:
In a bowl or food processor, mix flour, salt, sugar. Add cold butter and pulse or cut in until crumbly. Add ice water a tablespoon at a time until dough holds together.
Divide into 2 disks, wrap, and chill for 30 min (or use store-bought dough).
2. Preheat & prep pan:
Preheat oven to 375Β°F (190Β°C).
Grease or line a 10Γ15 inch jelly roll pan or baking sheet with parchment.
3. Roll and fit bottom crust:
Roll one dough portion into a rectangle to fit pan. Lay it in and trim edges.
4. Make the filling:
Toss sliced apples with sugars, flour, cinnamon, nutmeg, lemon juice, and vanilla.
Spread evenly over crust.
5. Top with second crust:
Roll out second dough piece and place over apples. Trim and crimp edges. Cut slits or poke holes for steam to escape.
6. Egg wash & bake:
Brush with beaten egg. Sprinkle with coarse sugar if using.
Bake 40β50 minutes, or until golden brown and bubbly.
7. Cool & glaze (optional):
