Here’s a fresh, tangy, and super simple recipe for Marinated Cucumbers, Onions, and Tomatoes — a perfect side salad that’s crisp, vibrant, and full of flavor. Great for picnics, BBQs, or just a refreshing addition to any meal!


🥒 Marinated Cucumbers, Onions, and Tomatoes Salad

🍽️ Serves: 4

⏱️ Time: 10 min prep + at least 30 min marinating


🛒 Ingredients:

  • 2 medium cucumbers, thinly sliced (English or Persian cucumbers work great)

  • 1 medium red onion, thinly sliced

  • 3–4 ripe tomatoes, chopped or sliced (Roma or vine-ripened)

  • 1/4 cup white vinegar or apple cider vinegar

  • 2 tbsp olive oil

  • 1 tbsp sugar or honey

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp dried oregano or fresh chopped parsley/basil

  • Optional: pinch of crushed red pepper flakes for a little heat


👩‍🍳 Instructions:

1. Prep the vegetables:

  • Place sliced cucumbers, onions, and tomatoes in a large bowl.

2. Make the marinade:

  • In a small bowl, whisk together vinegar, olive oil, sugar, salt, pepper, and oregano.

3. Combine and marinate:

  • Pour the marinade over the veggies and toss gently until everything is coated.

  • Cover and refrigerate for at least 30 minutes, but ideally 1–2 hours or overnight for best flavor.

4. Serve:

  • Toss again before serving and garnish with fresh herbs if desired.


💡 Tips:

  • For a crunchier texture, sprinkle some thinly sliced radishes or celery.

  • Add feta cheese or olives for a Mediterranean twist.

  • This salad keeps well for 1–2 days refrigerated, flavors deepen over time.
