Ah, the all-American classic: Apple Pie 🍏🥧
Golden, flaky crust with sweet, spiced apple filling — simple, nostalgic, and unbeatable when served warm with a scoop of vanilla ice cream.

Here’s a classic homemade apple pie recipe that delivers every time.

🥧 Classic Apple Pie

🕒 Prep Time: 30 minutes

⏱️ Bake Time: 50–60 minutes

🍽️ Serves: 8

🧂 Ingredients

🧁 For the pie crust (makes top + bottom crust):

  • 2 ½ cups (315 g) all-purpose flour

  • 1 tsp salt

  • 1 tbsp sugar

  • 1 cup (225 g) cold unsalted butter, cubed

  • 6–8 tbsp ice water

Or use 2 store-bought pie crusts to save time.

🍏 For the filling:

  • 6–7 medium apples (about 2½ lbs), peeled, cored, and sliced thin
(Best mix: Granny Smith + Honeycrisp or Fuji)

  • ¾ cup (150 g) granulated sugar

  • ¼ cup (50 g) brown sugar

  • 2 tbsp all-purpose flour (thickener)

  • 1 tsp ground cinnamon

  • ¼ tsp nutmeg

  • 1 tbsp lemon juice

  • 1 tsp vanilla extract

  • 1 tbsp cold butter, cut into small pieces (for dotting on top of filling)

🥚 For finishing:

  • 1 egg, beaten (egg wash)

  • 1 tbsp sugar (for sprinkling on top)

👩‍🍳 Instructions

1. Make the crust (or use store-bought)

  • In a bowl, whisk flour, sugar, and salt.

  • Cut in cold butter with a pastry cutter or fork until mixture resembles coarse crumbs.

  • Add ice water a tablespoon at a time until dough holds together.

  • Divide dough in half, shape into discs, wrap, and chill for at least 1 hour.

2. Make the filling

  • In a large bowl, toss apple slices with sugars, flour, cinnamon, nutmeg, lemon juice, and vanilla. Set aside.

3. Assemble the pie

  • Roll out one disc of dough into a circle ~12 inches wide.

  • Fit into a 9-inch pie dish and trim edges.

  • Pour in the apple filling. Dot with butter.

  • Roll out the second dough disc and place on top (full crust or lattice).

  • Seal edges and crimp. Cut slits in top if using full crust.

4. Brush and chill

  • Brush crust with beaten egg and sprinkle with sugar.

  • Chill pie in fridge for 15–20 minutes while oven preheats.

5. Bake

  • Preheat oven to 400°F (200°C).

  • Place pie on a baking sheet (to catch drips).

  • Bake for 50–60 minutes, until golden and bubbly.

  • If crust browns too fast, tent with foil after 30–40 min.

6. Cool before slicing

  • Let pie cool at least 2 hours so the filling sets.

🍦 Serve with:

  • Vanilla ice cream

  • Whipped cream

  • A drizzle of caramel or cheddar cheese for a classic New England twist

🔁 Tips & Variations

  • Add a handful of raisins, cranberries, or pecans to the filling

  • Use pre-cooked apples if you prefer a softer filling with no shrinkage

  • Spice it up: Add a pinch of clove, ginger, or allspice
