An Apple Slab Pie is like a giant Pop-Tart crossed with traditional apple pie — all the cozy, cinnamon-spiced goodness of apple pie but in a sheet pan form that’s perfect for feeding a crowd.

Here’s a classic, easy recipe for making one from scratch (with shortcut options too).


🍎 Apple Slab Pie

🍽️ Serves: 12–16

⏱️ Time: 30 min prep + 40–50 min bake


🛒 Ingredients:

For the crust:

  • 2 1/2 cups all-purpose flour

  • 1 tsp salt

  • 1 tbsp sugar

  • 1 cup (2 sticks) cold unsalted butter, cubed

  • 6–8 tbsp ice water

Or use 2 refrigerated pie crusts, rolled and pieced together


For the filling:

  • 6 cups peeled, sliced apples (Granny Smith, Honeycrisp, or a mix)

  • 1/2 cup granulated sugar

  • 1/4 cup brown sugar

  • 2 tbsp all-purpose flour

  • 1 1/2 tsp ground cinnamon

  • 1/4 tsp ground nutmeg

  • 1 tbsp lemon juice

  • Optional: 1 tsp vanilla extract


Topping:

  • 1 egg, beaten (for egg wash)

  • 1–2 tbsp coarse sugar (optional, for crunch)


Optional glaze (for drizzling after baking):

  • 1/2 cup powdered sugar

  • 1–2 tbsp milk or cream

  • 1/4 tsp vanilla


👩‍🍳 Instructions:

1. Make the crust:

In a bowl or food processor, mix flour, salt, sugar. Add cold butter and pulse or cut in until crumbly. Add ice water a tablespoon at a time until dough holds together.
Divide into 2 disks, wrap, and chill for 30 min (or use store-bought dough).

2. Preheat & prep pan:

Preheat oven to 375°F (190°C).
Grease or line a 10×15 inch jelly roll pan or baking sheet with parchment.

3. Roll and fit bottom crust:

Roll one dough portion into a rectangle to fit pan. Lay it in and trim edges.

4. Make the filling:

Toss sliced apples with sugars, flour, cinnamon, nutmeg, lemon juice, and vanilla.
Spread evenly over crust.

5. Top with second crust:

Roll out second dough piece and place over apples. Trim and crimp edges. Cut slits or poke holes for steam to escape.

6. Egg wash & bake:

Brush with beaten egg. Sprinkle with coarse sugar if using.
Bake 40–50 minutes, or until golden brown and bubbly.

7. Cool & glaze (optional):

Cool at least 20–30 minutes. Mix glaze ingredients and drizzle over cooled pie.


🍏 Tips:

  • Use two types of apples for depth of flavor (e.g., Granny Smith + Fuji).

  • Add chopped pecans or a crumble topping if you like texture.

  • Perfect served warm with vanilla ice cream.
