Here’s the classic Atlantic Beach Pie recipe — a North Carolina coastal favorite famous for its creamy citrus filling, salty-sweet cracker crust, and whipped topping. It’s easy, refreshing, and perfect for summer!


🥧 Atlantic Beach Pie (Original Style)

Ingredients

For the crust

  • 1 ½ sleeves (about 6 oz) saltine crackers

  • ½ cup melted butter

  • 3 tablespoons sugar

For the filling

  • 1 can (14 oz) sweetened condensed milk

  • 4 large egg yolks

  • ½ cup fresh lemon juice or ½ lemon + ½ lime juice (traditional mix)

For the topping

  • Whipped cream (homemade or store-bought)

  • Optional: lemon zest or crushed crackers for garnish


🍋 Instructions

1. Make the crust

  1. Preheat oven to 350°F (175°C).

  2. Crush crackers into coarse crumbs (not too fine—small chunks are perfect).

  3. Mix with melted butter and sugar until combined.

  4. Press firmly into a 9-inch pie dish.

  5. Bake for 10–12 minutes until lightly golden.

  6. Let cool slightly.


2. Make the filling

  1. Whisk together sweetened condensed milk and egg yolks until smooth.

  2. Add lemon/lime juice and whisk until fully combined and thickened.

  3. Pour filling into the warm crust.


3. Bake

  • Bake for 15–18 minutes, just until the center is set and no longer jiggly.

  • Cool to room temperature, then refrigerate for at least 3–4 hours (overnight is even better).


4. Finish

  • Top with whipped cream right before serving.

  • Garnish with lemon zest or a sprinkle of cracker crumbs.
