Bacon Cheeseburger Bombs

Here’s a crowd-pleasing, finger-food favorite: Bacon Cheeseburger Bombs! 🍔💣
Golden biscuit dough stuffed with juicy beef, crispy bacon, and melty cheese — perfect for parties, game day, or a fun dinner idea.


🧾 Ingredients

For the filling:

  • 1 lb (450g) ground beef

  • 6–8 slices bacon, cooked and crumbled

  • ½ cup diced onion (optional)

  • 1 tbsp ketchup

  • 1 tbsp yellow mustard

  • Salt and pepper, to taste

  • 1½ cups shredded cheddar cheese (or use small cheese cubes)

For assembly:

  • 1 can (16 oz) refrigerated biscuit dough (like Pillsbury Grands)

  • 1 large egg (for egg wash, optional)

  • 1 tbsp sesame seeds (optional topping)


👩‍🍳 Instructions

  1. Preheat oven:
    Set to 375°F (190°C) and line a baking sheet with parchment paper.

  2. Cook the filling:

    • In a skillet over medium heat, cook bacon until crispy. Remove and crumble.

    • In the same pan, cook ground beef (and onion if using) until browned.

    • Drain any grease.

    • Stir in ketchup, mustard, salt, pepper, and the crumbled bacon. Mix well.

    • Let the mixture cool slightly.

  3. Assemble the bombs:

    • Flatten each biscuit into a 4–5 inch circle.

    • Place about 1–2 tablespoons of the meat mixture in the center.

    • Top with a pinch (or cube) of cheese.

    • Fold the edges up and pinch to seal tightly, forming a ball.

    • Place seam-side down on the prepared baking sheet.

  4. Optional:
    Brush the tops with beaten egg and sprinkle with sesame seeds for a burger-bun look.

  5. Bake:
    Bake for 15–18 minutes, or until golden brown and puffed.

  6. Serve:
    Serve warm with dipping sauces — ketchup, mustard, burger sauce, or ranch.


🍔 Tips & Variations

  • Add a pickle slice inside for a tangy surprise.

  • Use Hawaiian roll dough or pizza dough instead of biscuits for a different texture.

  • Make them mini-size with smaller biscuits for party appetizers.

  • Reheat leftovers in an air fryer or oven for best results (avoid microwaving — they’ll get soggy).
