🍤✨ Baked Shrimp Scampi

Ingredients (serves 4):

  • 1 ½ lbs large shrimp, peeled and deveined

  • 4 tbsp unsalted butter, melted

  • 4 cloves garlic, minced

  • 1/4 cup dry white wine (or chicken broth)

  • Juice of 1 lemon

  • Zest of 1 lemon (optional)

  • 1/4 tsp red pepper flakes (optional, for a little heat)

  • Salt and freshly ground black pepper, to taste

  • 2 tbsp fresh parsley, chopped

  • 1/2 cup grated Parmesan cheese (optional)

  • Crusty bread or cooked pasta, for serving

Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Make the sauce: In a bowl, whisk together melted butter, minced garlic, white wine, lemon juice, lemon zest, red pepper flakes, salt, and pepper.

  3. Prepare shrimp: Place shrimp in a single layer in a baking dish.

  4. Pour sauce evenly over the shrimp, making sure they are well coated.

  5. Optional topping: Sprinkle grated Parmesan cheese over the shrimp for extra richness.

  6. Bake uncovered for 8–10 minutes, or until shrimp are pink and opaque (be careful not to overcook).

  7. Garnish: Sprinkle chopped parsley over the top before serving.

Serving suggestions:

  • Serve over angel hair pasta, rice, or with crusty bread to soak up the sauce.

  • Pair with a simple green salad or steamed veggies for a balanced meal.
