Baked shrimp scampi is a delicious and easy-to-make dish that’s full of flavor. Here’s a simple recipe you can try:

Baked Shrimp Scampi

Ingredients:

  • 1 lb large shrimp (peeled and deveined)

  • 4 cloves garlic (minced)

  • 1/2 cup unsalted butter (melted)

  • 1/4 cup olive oil

  • 1/4 cup dry white wine (like Sauvignon Blanc or Pinot Grigio)

  • 1 tablespoon fresh lemon juice (about half a lemon)

  • 1/4 teaspoon red pepper flakes (optional for a bit of heat)

  • Salt and pepper to taste

  • 1/4 cup grated Parmesan cheese

  • 2 tablespoons chopped fresh parsley (for garnish)

  • 1/2 cup panko breadcrumbs (for crunch, optional)

  • Fresh lemon wedges (for serving)

Instructions:

  1. Preheat your oven to 400°F (200°C).

  2. Prepare the shrimp: In a large bowl, toss the shrimp with a little olive oil, salt, and pepper to coat them. Set aside.

  3. Make the scampi sauce: In a small bowl, mix together the melted butter, olive oil, garlic, wine, lemon juice, red pepper flakes (if using), and a pinch of salt and pepper. Stir until everything is well combined.

  4. Assemble the dish: In a baking dish (preferably a 9×13-inch dish), arrange the shrimp in a single layer. Pour the scampi sauce evenly over the shrimp. If you’re using panko breadcrumbs, sprinkle them over the shrimp for added crunch.

  5. Top with cheese: Sprinkle the grated Parmesan cheese over the shrimp and drizzle any remaining scampi sauce over the top.

  6. Bake: Place the dish in the oven and bake for 10-12 minutes, or until the shrimp are pink, opaque, and cooked through.

  7. Garnish: Once baked, remove the dish from the oven and sprinkle with fresh chopped parsley. Serve with lemon wedges for squeezing over the top.

  8. Serve: This dish pairs perfectly with pasta, rice, or a side of crusty bread to soak up the delicious sauce.
