Baked Spinach Mushroom Quesadillas

These are easy, crispy, and oven-baked (no standing over the stove!) — perfect as a quick dinner, lunch, or party snack 🌮🍄


Baked Spinach & Mushroom Quesadillas

Ingredients (makes 4 quesadillas)

  • 4 large flour tortillas
  • 1½ cups shredded cheese (Monterey Jack, mozzarella, or cheddar)
  • 1 cup mushrooms, sliced
  • 2 cups fresh spinach, chopped
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat oven to 400°F (200°C)
    Line a baking sheet with parchment paper.
  2. Sauté veggies
    • Heat olive oil in a skillet over medium heat.
    • Add mushrooms and cook 4–5 minutes until browned.
    • Add garlic and spinach; cook until spinach wilts.
    • Season with salt and pepper.
  3. Assemble quesadillas
    • Lay tortillas on baking sheet.
    • Sprinkle cheese over half of each tortilla.
    • Add mushroom-spinach mixture.
    • Top with more cheese.
    • Fold tortillas in half.
  4. Bake
    • Lightly brush tops with oil or spray with cooking spray.
    • Bake 10–12 minutes, flip, then bake 5–7 minutes more until golden and crispy.
  5. Serve
    • Slice into wedges.
    • Serve with salsa, sour cream, or guacamole.

Tips for extra flavor

  • Add caramelized onions for sweetness
  • Sprinkle a little Parmesan inside for depth
  • Use whole-wheat tortillas for a heartier bite

Make it a meal

  • Add black beans or refried beans
  • Toss in chicken or tofu
  • Serve with a simple salad or rice
