- 4 large flour tortillas

- 2 cups fresh spinach, chopped
- 1 tbsp olive oil
- 1 clove garlic, minced
- ½ tsp salt
- ¼ tsp black pepper

Instructions
- Preheat oven to 400°F (200°C)
Line a baking sheet with parchment paper. - Sauté veggies
- Heat olive oil in a skillet over medium heat.
- Add mushrooms and cook 4–5 minutes until browned.
- Add garlic and spinach; cook until spinach wilts.
- Season with salt and pepper.
- Assemble quesadillas
- Lay tortillas on baking sheet.
- Sprinkle cheese over half of each tortilla.
- Add mushroom-spinach mixture.
- Top with more cheese.
- Fold tortillas in half.
- Bake
- Lightly brush tops with oil or spray with cooking spray.
- Bake 10–12 minutes, flip, then bake 5–7 minutes more until golden and crispy.
- Serve
- Slice into wedges.
