🧆 Baked Zucchini Balls
Ingredients
(Makes about 18–20 balls)
-
2 medium zucchinis, grated (about 2 cups)
-
½ cup breadcrumbs (plain or Italian-style)
-
½ cup Parmesan cheese, grated
-
1 egg, beaten
-
1 clove garlic, minced
-
2 tbsp fresh parsley, chopped (or 1 tsp dried)
-
½ tsp salt
-
¼ tsp black pepper
-
Optional: pinch of chili flakes for a little heat
-
Olive oil spray for baking
Instructions
1. Prep the zucchini
-
Grate zucchini and place in a clean towel or cheesecloth.
-
Squeeze out as much excess water as possible — this step is key for crispness!
2. Mix ingredients
-
In a large bowl, combine grated zucchini, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper.
-
Stir until mixture holds together (add a few more breadcrumbs if too wet).
3. Shape the balls
-
Preheat oven to 400°F (200°C).
-
Line a baking sheet with parchment paper.
-
Roll mixture into 1–1½-inch balls and place them on the sheet.
-
Lightly spray or brush with olive oil.
4. Bake
-
Bake for 20–25 minutes, turning halfway, until golden brown and crisp.
5. Serve
-
Serve warm with marinara sauce, ranch, or garlic yogurt dip.
💡 Tips
-
You can replace breadcrumbs with panko for extra crunch.
-
Add shredded mozzarella for a gooey center.
-
These freeze beautifully — reheat in the oven for a quick snack!
