Baked Zucchini Balls

🧆 Baked Zucchini Balls

Ingredients

(Makes about 18–20 balls)

  • 2 medium zucchinis, grated (about 2 cups)

  • ½ cup breadcrumbs (plain or Italian-style)

  • ½ cup Parmesan cheese, grated

  • 1 egg, beaten

  • 1 clove garlic, minced

  • 2 tbsp fresh parsley, chopped (or 1 tsp dried)

  • ½ tsp salt

  • ¼ tsp black pepper

  • Optional: pinch of chili flakes for a little heat

  • Olive oil spray for baking


Instructions

1. Prep the zucchini

  1. Grate zucchini and place in a clean towel or cheesecloth.

  2. Squeeze out as much excess water as possible — this step is key for crispness!


2. Mix ingredients

  • In a large bowl, combine grated zucchini, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper.

  • Stir until mixture holds together (add a few more breadcrumbs if too wet).


3. Shape the balls

  • Preheat oven to 400°F (200°C).

  • Line a baking sheet with parchment paper.

  • Roll mixture into 1–1½-inch balls and place them on the sheet.

  • Lightly spray or brush with olive oil.


4. Bake

  • Bake for 20–25 minutes, turning halfway, until golden brown and crisp.


5. Serve

  • Serve warm with marinara sauce, ranch, or garlic yogurt dip.


💡 Tips

  • You can replace breadcrumbs with panko for extra crunch.

  • Add shredded mozzarella for a gooey center.

  • These freeze beautifully — reheat in the oven for a quick snack!
