1. Cook the Mash:

  • Season with salt and pepper. Keep warm.

2. Cook the Bangers:

  • Heat olive oil in a skillet over medium heat.

  • Add sausages and cook, turning occasionally, for 12–15 minutes, until golden brown and cooked through.

  • Remove from pan and keep warm.

3. Make the Onion Gravy:

  • In the same skillet, melt butter and sauté onions over medium heat until soft and caramelized (about 8–10 minutes).

  • Stir in flour and cook 1–2 minutes.

  • Gradually whisk in stock and Worcestershire sauce.

  • Simmer 5–10 minutes until thickened. Season with salt and pepper.

4. Assemble the Dish:

  • Plate a generous scoop of mashed potatoes, top with sausages, and pour over the onion gravy.

  • Garnish with chopped parsley if desired.
