Beef Tips and Gravy is a hearty, tender, and savory dish made with slow-simmered beef chunks smothered in rich brown gravy. It’s perfect over mashed potatoes, rice, or egg noodles.
🥘 Beef Tips and Gravy (Stovetop or Slow Cooker)

🛒 Ingredients:

2 lbs beef stew meat or sirloin tips, cut into bite-sized chunks

2 tbsp olive oil or butter

1 medium onion, diced
-
2 cloves garlic, minced
-
3 cups beef broth
-
2 tbsp Worcestershire sauce
-
1 tbsp soy sauce (optional, for umami)

1 tsp onion powder
-
1/2 tsp thyme or Italian seasoning
-
Salt & black pepper, to taste

2 tbsp cornstarch + 2 tbsp cold water (for thickening)
🔥 Stovetop Instructions:
1. Sear the beef:

Heat oil in a large pot or Dutch oven over medium-high heat.

Brown beef in batches for 3–4 minutes until seared. Don’t overcrowd the pan.

Remove and set aside.
2. Sauté the aromatics:

In the same pot, add onion and cook until soft (about 5 min).

Add garlic and cook 1 minute more.
3. Simmer:

Return beef to the pot.

Add beef broth, Worcestershire sauce, soy sauce, onion powder, thyme, salt, and pepper.

Bring to a boil, reduce heat to low, cover, and simmer for 1 to 1.5 hours, or until beef is fork-tender.
4. Thicken the gravy:

Mix cornstarch and cold water in a small bowl.

Slowly stir into simmering beef mixture.

Cook uncovered, stirring, for 5–10 minutes until gravy thickens.
🐢 Slow Cooker Version:

Brown beef and onions (optional but boosts flavor).

Transfer to slow cooker. Add broth, Worcestershire, soy sauce, garlic, and seasonings.

Cook on LOW for 6–8 hours or HIGH for 4–5 hours until beef is very tender.

In the last 30 minutes, stir in the cornstarch slurry and cook uncovered until thickened.
