🍽️ Beef Tips with Gravy (Over Egg Noodles)

Ingredients

For the beef tips:

  • 1 ½ – 2 lbs beef stew meat (or sirloin tips, chuck roast cut into cubes)

  • 2 tbsp olive oil or butter

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 3 cups beef broth

  • 2 tbsp Worcestershire sauce

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika (optional)

  • 1 tsp dried thyme or Italian seasoning (optional)

For the gravy:

  • 2 tbsp flour

  • 2 tbsp butter (or cornstarch slurry: 2 tbsp cornstarch + ¼ cup cold water)

For serving:

  • 12 oz egg noodles, cooked

  • Chopped parsley (optional, for garnish)


Instructions

  1. Sear the beef:

    • Heat olive oil or butter in a large skillet or Dutch oven over medium-high heat.

    • Add beef in batches and brown on all sides (don’t overcrowd). Remove and set aside.

  2. Sauté aromatics:

    • In the same pan, add diced onion and cook until softened (about 3–4 minutes).

    • Add minced garlic and cook another 30 seconds.

  3. Deglaze & simmer:

    • Add ½ cup of the beef broth and scrape up any browned bits from the pan.

    • Return beef to the pan. Add remaining broth, Worcestershire sauce, salt, pepper, paprika, and thyme.

    • Bring to a boil, then reduce heat to low, cover, and simmer for 1½–2 hours, or until beef is tender. (If using sirloin tips, 45–60 minutes may be enough.)

  4. Make the gravy:

    • When beef is tender, remove the lid.

    • Stir in butter and sprinkle flour over the mixture, stirring until smooth (or add the cornstarch slurry).

    • Simmer 5–10 minutes until the gravy thickens.

  5. Cook noodles:

    • Meanwhile, cook egg noodles according to package directions. Drain and toss with a little butter.

  6. Serve:

    • Spoon beef tips and rich brown gravy over egg noodles.

    • Garnish with chopped parsley if desired.


💡 Tips & Variations

  • Slow cooker: Brown beef first, then cook everything (except thickener) on LOW 7–8 hrs or HIGH 3–4 hrs. Thicken before serving.

  • Mushroom gravy: Add sliced mushrooms when sautéing the onions.

  • Richer flavor: Add a splash of red wine or a teaspoon of beef bouillon.

  • Serve alternatives: Great over mashed potatoes, rice, or even biscuits.
