Beer-Braised Sausages with Onions
Ingredients
- 4–6 sausages (bratwurst, Italian, or other fresh sausages)
- 2 large onions, thinly sliced
- 2 tbsp butter or oil
- 1 tsp sugar (optional, helps caramelize onions)
- 1 tsp mustard (Dijon or whole-grain)
- 1 cup beer
- Salt and pepper to taste
- Optional: thyme or bay leaf
Instructions
- Brown the sausages
Heat a skillet over medium heat with a little oil. Brown sausages on all sides. Remove and set aside. - Cook the onions
In the same pan, add butter/oil and onions. Cook slowly until soft and golden, about 10–15 minutes. Add sugar if using. - Deglaze with beer
Pour in the beer, scraping up any browned bits. Stir in mustard and herbs. - Braise
Return sausages to the pan. Cover and simmer on low for 15–20 minutes, until sausages are cooked through and flavorful. - Finish
Season with salt and pepper. Uncover for a few minutes if you want the sauce thicker.
