💙 Blueberry Oatmeal Crisp Bars

(Makes about 12–16 bars)

Ingredients

🫐 For the Blueberry Filling:

  • 2 cups fresh or frozen blueberries

  • 2 tsp lemon juice

  • 2 tsp cornstarch

  • 2 tbsp granulated sugar

  • 1 tsp vanilla extract

🌾 For the Oat Crust & Topping:

  • 1 cup all-purpose flour

  • 1 cup old-fashioned oats

  • ½ cup brown sugar, packed

  • ¼ cup granulated sugar

  • ½ tsp baking powder

  • ¼ tsp salt

  • ½ cup (1 stick) unsalted butter, melted

  • 1 tsp vanilla extract


Instructions

1. Preheat oven

  • Set to 350°F (175°C).

  • Line an 8×8-inch baking dish with parchment paper, leaving overhang for easy removal.


2. Make the blueberry filling

  1. In a small saucepan, combine blueberries, lemon juice, sugar, cornstarch, and vanilla.

  2. Cook over medium heat, stirring often, until the mixture thickens and becomes glossy (about 5–7 minutes).

  3. Remove from heat and let cool slightly.


3. Make the oat crust/topping

  1. In a large bowl, combine flour, oats, brown sugar, granulated sugar, baking powder, and salt.

  2. Stir in melted butter and vanilla until the mixture is crumbly but holds together when pressed.


4. Assemble

  • Press about ⅔ of the oat mixture firmly into the bottom of the pan.

  • Spread the blueberry filling evenly on top.

  • Sprinkle the remaining crumb mixture over the filling and gently press it down.


5. Bake

  • Bake for 35–40 minutes, until the top is golden and bubbling at the edges.

  • Cool completely before cutting into bars (they firm up as they cool).


💡 Tips & Variations

  • Add ½ tsp cinnamon to the oat layer for warmth.

  • Use a mix of blueberries + raspberries for a berry blend.

  • For a healthier version, replace half the butter with coconut oil or applesauce.

  • Store at room temp up to 2 days or refrigerated up to 5 days.
