Boiling potatoes in water sounds simple — and it is — but doing it right makes a big difference depending on what you’re using them for (mashed potatoes, salads, roasting, etc.). 🥔💧

🥔 How to Boil Potatoes in Water

Ingredients

  • Potatoes (any variety)

  • Cold water

  • Salt (about 1–2 tsp per quart of water)

  1. Wash and Prep:
    Scrub potatoes under cool water to remove dirt.

    • For mashed potatoes: Peel and cut into even chunks (~1½-inch pieces).

    • For potato salad: Leave skins on if desired; cut into bite-sized cubes.

    • For whole small potatoes: You can boil them whole.

  2. Add to Pot:
    Place potatoes in a large pot.
    Add enough cold water to cover them by about 1 inch.
    Starting with cold water ensures even cooking.

  3. Add Salt:
    Add 1–2 teaspoons of salt per quart of water.
    (Salting early seasons the potatoes from the inside out.)

  4. Bring to a Boil:
    Place pot on medium-high heat.
    Bring to a gentle boil, not a hard rolling one (which can make them mushy).

  5. Simmer Until Tender:
    Reduce heat to medium and cook until potatoes are fork-tender:

    • Cubed potatoes: 10–12 minutes

    • Whole small potatoes: 15–20 minutes

    • Large whole potatoes: 25–30 minutes

    You’ll know they’re done when a fork slides in easily with no resistance.

  6. Drain:
    Pour potatoes into a colander to drain well.
    Let them steam for a minute or two to release excess moisture (important for mashed potatoes).

  7. Use as Desired:

    • Mash them with butter, milk, and salt.

    • Toss them with herbs and olive oil.

    • Chill them for salads.

  • Add a bay leaf or garlic clove to the water for subtle aroma.

  • Add a splash of vinegar when boiling for potato salad — it helps them hold their shape.
