Instructions

1️⃣ Make the Cupcakes

  1. Preheat oven to 175°C / 350°F. Line a 12-cup muffin tin with liners.
  2. Whisk flour, baking powder, and salt together.
  3. Cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.
  4. Alternate adding dry ingredients and milk, mixing gently until smooth.
  5. Divide batter evenly among liners. Bake 18–20 minutes. Cool completely.

2️⃣ Make the Pastry Cream

  1. Heat milk in a saucepan until just simmering.
  2. In a bowl, whisk yolks, sugar, and cornstarch.
  3. Slowly pour hot milk into egg mixture, whisking constantly.
  4. Return to saucepan, cook over medium heat until thickened.
  5. Remove from heat, stir in butter and vanilla. Cool slightly.
  6. Chill in fridge until ready to fill.

3️⃣ Fill the Cupcakes

  1. Core the center of each cooled cupcake (use a small knife or cupcake corer).
  2. Pipe or spoon pastry cream into the center.

4️⃣ Make the Chocolate Ganache

  1. Heat cream until just simmering. Pour over chocolate chips.
  2. Let sit 1–2 minutes, then stir until smooth.
  3. Pour or spread ganache on top of each filled cupcake.

5️⃣ Chill & Serve

  • Chill 15–30 minutes to set ganache
