Here’s a warm and comforting classic Chicken Soup recipe — simple, nourishing, and perfect for any day you need some cozy vibes.


🍲 Classic Chicken Soup

Ingredients

  • 1 whole chicken (about 3–4 lbs), or 4 chicken thighs/drumsticks

  • 8 cups water or chicken broth

  • 2 large carrots, sliced

  • 2 celery stalks, sliced

  • 1 large onion, chopped

  • 3 cloves garlic, minced

  • 1 tsp salt (adjust to taste)

  • ½ tsp black pepper

  • 1 tsp dried thyme or 2 sprigs fresh thyme

  • 1 bay leaf

  • 1 cup egg noodles or rice (optional)

  • Fresh parsley or dill for garnish


Instructions

  1. Cook the chicken:

    • In a large pot, add chicken and water (or broth). Bring to a boil, then reduce to a simmer. Skim any foam that forms on top.

  2. Add vegetables and seasoning:

    • Add carrots, celery, onion, garlic, salt, pepper, thyme, and bay leaf.

    • Simmer uncovered for about 1 to 1½ hours, or until chicken is cooked and tender.

  3. Remove chicken:

    • Take the chicken out and let it cool slightly. Remove meat from bones and shred or chop it. Discard bones and skin.

  4. Optional:

    • Add noodles or rice to the soup and cook until tender (about 8–10 minutes for noodles).

    • Return shredded chicken to the pot and heat through.

  5. Finish and serve:

    • Taste and adjust seasoning if needed.

    • Garnish with fresh parsley or dill. Serve hot.


Tips

  • Use leftover roast chicken to speed up the process.

  • Add lemon juice or a splash of vinegar for a bright flavor twist.

  • Freeze leftovers in portions for easy meals later!
