Broiled Lamb with Roasted Potatoes and Broccoli

Here’s a delicious and well-balanced recipe for Broiled Lamb with Roasted Potatoes and Broccoli — a flavorful, satisfying meal that’s perfect for a weeknight dinner or a special occasion. The broiled lamb gets a beautiful sear while staying juicy, and the veggies roast to perfection with minimal effort.


🐑 Broiled Lamb with Roasted Potatoes & Broccoli

🍽️ Serves: 4

⏱️ Time: 15 min prep + 30–40 min cook


🛒 Ingredients:

For the lamb:

  • 4 lamb chops or lamb loin chops (about 1–1.5 inches thick)

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tbsp fresh rosemary or 1 tsp dried

  • 1 tsp fresh thyme or oregano

  • Salt and black pepper, to taste

  • Optional: 1 tbsp lemon juice or zest

For the roasted vegetables:

  • 1 ½ lbs baby potatoes, halved or quartered

  • 1 large head broccoli, cut into florets

  • 3 tbsp olive oil (divided)

  • 1 tsp garlic powder

  • Salt & pepper, to taste

  • Optional: red pepper flakes or Parmesan


👩‍🍳 Instructions:

🔹 Step 1: Prep & Marinate the Lamb

  1. Pat lamb chops dry and place in a shallow dish.

  2. In a small bowl, mix olive oil, garlic, rosemary, thyme, lemon juice/zest, salt, and pepper.

  3. Rub mixture all over lamb chops. Let sit at room temp while veggies roast.


🔹 Step 2: Roast the Potatoes & Broccoli

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment or foil.

  2. Toss potatoes with 1 ½ tbsp olive oil, garlic powder, salt & pepper. Spread on the baking sheet and roast for 20 minutes.

  3. After 20 minutes, toss broccoli with remaining 1 ½ tbsp oil and seasonings. Add to the sheet with potatoes.

  4. Roast everything together for another 15–20 minutes, until potatoes are golden and broccoli is slightly crisp.


🔹 Step 3: Broil the Lamb

  1. Preheat broiler to high (500°F+ or “broil” setting).

  2. Place marinated lamb chops on a broiler pan or foil-lined sheet.

  3. Broil 3–4 inches from the heat source for about 4–5 minutes per side (for medium-rare), depending on thickness.

  4. Use a meat thermometer for doneness:

    • 125°F for rare

    • 135°F for medium-rare

    • 145°F for medium

Let rest 5 minutes before serving.


🍋 To Serve:

  • Plate lamb chops alongside roasted potatoes and broccoli.

  • Optional garnish: drizzle with a little lemon juice, or serve with tzatziki, chimichurri, or minted yogurt sauce.


💡 Tips:

  • No broiler? You can pan-sear the lamb for 3–4 minutes per side and finish in a 400°F oven for 5–7 minutes.

  • Add flavor: Toss broccoli with lemon zest, chili flakes, or Parmesan before roasting.
