Cabbage and sausage is a cozy, rustic dish that’s easy to make and full of savory, satisfying flavor. It’s perfect as a quick weeknight meal or hearty side — especially when you want something simple, budget-friendly, and filling.

Here’s a classic skillet-style recipe you can whip up in about 30 minutes:


🥘 Cabbage and Sausage Skillet

🕒 Prep: 10 min | Cook: 20–25 min

🍽️ Serves: 4–6


🧂 Ingredients

  • 1 tbsp olive oil or butter

  • 1 lb (450g) smoked sausage or kielbasa, sliced into coins

  • 1 medium onion, sliced

  • 3 cloves garlic, minced

  • 1 medium head of green cabbage, chopped (about 6–8 cups)

  • Salt and black pepper, to taste

  • ½ tsp paprika (optional)

  • ¼ tsp red pepper flakes (optional, for heat)

  • ¼ cup chicken broth or water (optional, helps soften cabbage)

  • 1 tsp apple cider vinegar or a squeeze of lemon juice (optional, brightens the dish)


👨‍🍳 Instructions

  1. Sauté sausage
    In a large skillet or Dutch oven, heat oil over medium heat. Add sliced sausage and cook until browned (4–5 minutes). Remove sausage and set aside.

  2. Cook onions and garlic
    In the same pan, add sliced onion. Sauté 3–4 minutes until soft, then add garlic and cook 30 seconds more.

  3. Add cabbage
    Stir in chopped cabbage. Season with salt, pepper, paprika, and red pepper flakes if using. Sauté for 5–7 minutes, stirring occasionally.

  4. Steam & soften
    Add broth or water if using. Cover and cook another 5–10 minutes, until cabbage is tender but not mushy.

  5. Finish
    Return sausage to the pan and stir everything together. Cook for 2–3 minutes to heat through. Add vinegar or lemon juice to brighten the flavor.

  6. Serve warm
    Delicious as is, or serve with:

    • Mashed potatoes

    • Rice

    • Egg noodles

    • Crusty bread


🔁 Variations

  • Use red cabbage for a different color and slightly sweeter flavor

  • Add diced potatoes for a one-pan meal

  • Swap sausage for ground pork, bacon, or vegan sausage

  • Stir in a little mustard, sauerkraut, or caraway seeds for extra flavor
