  • 1 lb (450 g) ground chicken

  • 1 tbsp olive oil or butter

  • 1 small onion, finely chopped

  • 1 small green bell pepper, finely chopped

  • 2 cloves garlic, minced

  • 2 tsp Cajun seasoning (adjust to taste)

  • ½ tsp smoked paprika (optional, for extra depth)

  • 1 cup tomato sauce (or crushed tomatoes)

  • 2 tbsp ketchup

  • 1 tbsp Worcestershire sauce

  • 1 tsp Dijon or yellow mustard

  • 1 tbsp brown sugar (optional, for balance)

  • Salt and pepper to taste

  • 4 hamburger buns, toasted

  • Optional toppings: sliced pickles, melted cheese, or coleslaw


🔥 Instructions

  1. Cook the aromatics:
    In a large skillet, heat the oil over medium heat. Add the onion and bell pepper, and cook for about 4 minutes until softened. Add the garlic and cook 30 seconds more.

  2. Brown the chicken:
    Add ground chicken, breaking it up with a spoon. Cook until no longer pink, about 5–6 minutes.

  3. Season:
    Stir in Cajun seasoning, smoked paprika, salt, and pepper. Mix well so the spices coat the meat.

  4. Add the sauce ingredients:
    Stir in tomato sauce, ketchup, Worcestershire, mustard, and brown sugar. Bring to a simmer.

  5. Simmer:
    Reduce heat and cook uncovered for 8–10 minutes, stirring occasionally, until thickened to your liking.

  6. Assemble:
    Spoon the Cajun chicken mixture onto toasted buns. Top with pickles, cheese, or coleslaw if desired.


🧀 Optional twist ideas

  • Cheesy version: Stir in ½ cup shredded cheddar or pepper jack at the end.

  • Extra heat: Add a few dashes of hot sauce or a minced jalapeño with the peppers.

  • Healthier version: Serve it on lettuce wraps or over rice instead of a bun.
