Here’s a tried-and-true recipe that gives you that buttery caramel flavor and a creamy, melt-in-your-mouth texture, studded with toasted nuts for crunch.


🍬 Caramel Nut Fudge

Ingredients

  • 2 cups (400 g) granulated sugar

  • 1 cup (240 ml) sweetened condensed milk

  • 1/2 cup (120 ml) heavy cream

  • 1/2 cup (115 g) unsalted butter

  • 1/4 cup (60 ml) light corn syrup (or golden syrup)

  • 1 tsp vanilla extract

  • 1/2 tsp sea salt (optional but recommended)

  • 1 ½ cups (about 200 g) mixed nuts — walnuts, pecans, almonds, cashews, or pistachios (lightly toasted)


Instructions

  1. Prep the pan:
    Line an 8×8-inch (20×20 cm) baking pan with parchment paper and lightly butter it.

  2. Toast the nuts:
    Toast your mixed nuts in a dry pan or oven at 350°F (175°C) for 6–8 minutes until fragrant. Set aside.

  3. Cook the caramel fudge base:

    • In a heavy-bottomed saucepan, combine sugar, condensed milk, cream, butter, and corn syrup.

    • Cook over medium heat, stirring constantly until everything melts and blends smoothly.

    • Continue cooking, stirring frequently, until the mixture reaches 238°F–240°F (115°C) on a candy thermometer — the soft-ball stage.

  4. Add flavor & nuts:
    Remove from heat. Quickly stir in vanilla, salt, and the toasted nuts. Mix well but gently.

  5. Set the fudge:
    Pour immediately into your prepared pan. Smooth the top with a spatula.
    Let it cool at room temperature for about 2–3 hours, then refrigerate for at least 1 hour to firm up.

  6. Cut & store:
    Once set, lift from the pan and cut into squares. Store in an airtight container at room temp for up to a week (or in the fridge for longer).


💡 Chef’s Tips

  • For deeper flavor, brown the butter slightly before adding the other ingredients.

  • A sprinkle of flaky sea salt on top before it sets makes an incredible salted caramel fudge.

  • Mix and match nuts — try pecan + pistachio or almond + hazelnut for gourmet flavor.

  • You can also drizzle melted chocolate over the top before cutting for an extra layer of richness.
