🧄🧈 Cheesy Garlic Butter Chicken

Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts (or thighs)

  • 1 ½ tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika

  • 1 tsp Italian seasoning

  • 3 tbsp unsalted butter

  • 4 cloves garlic, minced

  • ½ cup chicken broth

  • ½ cup heavy cream (or half-and-half)

  • 1 cup shredded mozzarella cheese (or a mix of mozzarella & cheddar)

  • ¼ cup grated Parmesan cheese

  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

1. Prepare the chicken

  • Season chicken with salt, pepper, paprika, and Italian seasoning on both sides.


2. Sear

  • In a large skillet over medium-high heat, melt 2 tbsp butter.

  • Add chicken and sear for 4–5 minutes per side, until golden brown (doesn’t have to be fully cooked yet).

  • Remove and set aside.


3. Make the garlic butter sauce

  • In the same pan, add remaining 1 tbsp butter and garlic. Sauté for 30 seconds until fragrant.

  • Pour in chicken broth and heavy cream, stirring to scrape up brown bits.

  • Let simmer for 2–3 minutes until slightly thickened.


4. Add cheese & chicken

  • Stir in Parmesan cheese, then place chicken back into the skillet.

  • Sprinkle mozzarella cheese over the top.

  • Cover the pan and simmer on low heat for 5–7 minutes, until chicken is cooked through (165°F) and cheese is melted and bubbly.


5. Serve

  • Garnish with fresh parsley and serve warm over:

    • Buttered pasta 🍝

    • Rice 🍚

    • Mashed potatoes 🥔

    • Or roasted veggies 🥦


💡 Tips

  • Want extra flavor? Add a squeeze of lemon juice at the end for brightness.

  • Use smoked paprika or red pepper flakes for a little kick.

  • You can also bake this! After adding cheese, bake at 400°F (200°C) for 10 minutes until bubbly.
