🧀 Cheesy Mashed Potato Puffs
🧂 Ingredients (Makes about 12 muffin-sized puffs)

2 cups mashed potatoes (leftovers work great – make sure they’re not too runny)

3/4 cup shredded cheddar cheese (or a mix – Gruyère, mozzarella, or Parmesan work well too)

1/4 cup sour cream or Greek yogurt

2 tbsp chopped green onions or chives

Salt & pepper to taste

1/4 tsp garlic powder (optional)

Butter or nonstick spray (for greasing muffin tin)

1. Preheat oven
Set to 400°F (200°C). Grease a muffin tin thoroughly with butter or spray.
2. Mix the ingredients
In a mixing bowl, combine:

Green onions

Garlic powder, salt, and pepper
Mix until smooth and fully combined.
3. Spoon into muffin cups
Divide the mixture evenly into the muffin tin. Fill each cup about 3/4 full and smooth the tops. You can sprinkle a little extra cheese on top if you want a crispy, cheesy crust.
4. Bake
Bake for 20–25 minutes, or until the tops are golden and slightly puffed. Let them cool in the pan for 5 minutes before removing.
5. Serve warm
