You’re going to love these! Cheesy Mashed Potato Puffs are fluffy, savory, and irresistibly golden bites made from mashed potatoes, eggs, cheese, and a few simple mix-ins. They’re perfect as a side dish, party snack, or a creative way to use leftover mashed potatoes.


🧀 Cheesy Mashed Potato Puffs

🧂 Ingredients (Makes about 12 muffin-sized puffs)

  • 2 cups mashed potatoes (leftovers work great – make sure they’re not too runny)

  • 2 large eggs

  • 3/4 cup shredded cheddar cheese (or a mix – Gruyère, mozzarella, or Parmesan work well too)

  • 1/4 cup sour cream or Greek yogurt

  • 2 tbsp chopped green onions or chives

  • Salt & pepper to taste

  • 1/4 tsp garlic powder (optional)

  • Butter or nonstick spray (for greasing muffin tin)


👩‍🍳 Instructions:

1. Preheat oven

Set to 400°F (200°C). Grease a muffin tin thoroughly with butter or spray.

2. Mix the ingredients

In a mixing bowl, combine:

  • Mashed potatoes

  • Eggs

  • Cheese

  • Sour cream

  • Green onions

  • Garlic powder, salt, and pepper

Mix until smooth and fully combined.

3. Spoon into muffin cups

Divide the mixture evenly into the muffin tin. Fill each cup about 3/4 full and smooth the tops. You can sprinkle a little extra cheese on top if you want a crispy, cheesy crust.

4. Bake

Bake for 20–25 minutes, or until the tops are golden and slightly puffed. Let them cool in the pan for 5 minutes before removing.

5. Serve warm

Enjoy as a side with grilled meats, holiday meals, or just on their own with a dollop of sour cream or hot sauce.


🥔 Tips & Variations:

  • Add bacon bits, caramelized onions, or finely chopped spinach for more flavor.

  • Make mini potato puffs using a mini muffin tin (reduce baking time to 12–15 minutes).

  • For a crispier edge, sprinkle breadcrumbs or Parmesan in the greased muffin cups before adding the potato mix.
