Cheesy Sausage Breakfast Casserole

Ingredients (Serves 6–8)

  • 1 lb breakfast sausage (pork or turkey)

  • 6 large eggs

  • 2 cups milk

  • 2 cups shredded cheddar cheese (or Colby-Jack)

  • 1 cup shredded mozzarella (optional, extra cheesy)

  • 3 cups frozen hash browns (or diced potatoes)

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Optional: ½ tsp paprika or red pepper flakes


Instructions

  1. Preheat oven to 350°F (175°C).
    Grease a 9×13-inch baking dish.

  2. Cook the sausage
    Brown sausage in a skillet over medium heat, breaking it up.
    Drain excess grease.

  3. Assemble the casserole

    • Spread hash browns evenly in the baking dish.

    • Top with cooked sausage.

    • Sprinkle 1½ cups of the cheese over the top.

  4. Mix eggs
    Whisk eggs, milk, salt, pepper, garlic powder, onion powder, and optional seasonings.

  5. Pour & top
    Pour egg mixture evenly over everything.
    Sprinkle remaining cheese on top.

  6. Bake

    • Cover with foil and bake 30 minutes.

    • Uncover and bake another 15–20 minutes until set and golden.

  7. Rest & serve
    Let sit 5–10 minutes before slicing.


Make-Ahead Tip

  • Assemble the night before, cover, and refrigerate.

  • Bake fresh in the morning—just add 5–10 extra minutes.


Easy Variations

  • Add bell peppers, onions, or spinach

  • Swap sausage for bacon or ham

  • Use pepper jack for a little kick
