Cheesy Sausage Muffins are the perfect grab-and-go breakfast or snack — savory, hearty, and loaded with melty cheese and flavorful sausage. They’re great for meal prep, brunch spreads, or even as a side for soups or chili!

🧀 Cheesy Sausage Muffins

🍽️ Makes: 12 standard muffins

⏱️ Ready in: ~30 minutes

🛒 Ingredients:

  • 1 lb breakfast sausage (pork, turkey, or spicy)

  • 1 1/2 cups all-purpose flour

  • 1 tbsp baking powder

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp garlic powder (optional)

  • 1 1/2 cups shredded sharp cheddar cheese

  • 2 large eggs

  • 1/3 cup milk

  • 1/4 cup sour cream or plain Greek yogurt

  • 2 tbsp melted butter or oil

👩‍🍳 Instructions:

1. Cook the sausage:

  • In a skillet over medium heat, cook sausage until browned and fully cooked.

  • Break into small crumbles and drain excess grease. Let cool slightly.

2. Prep the batter:

  • Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.

  • In a large bowl, whisk together flour, baking powder, salt, pepper, and garlic powder.

  • Stir in the shredded cheese and cooled sausage.

3. Mix wet ingredients:

  • In a separate bowl, whisk together eggs, milk, sour cream, and melted butter.

4. Combine & fill:

  • Add the wet ingredients to the dry ingredients and mix until just combined — don’t overmix.

  • Spoon evenly into 12 muffin cups (they’ll be full).

5. Bake:

  • Bake for 18–22 minutes, or until golden on top and a toothpick comes out clean.

6. Cool & enjoy:

  • Let cool for 5 minutes in the pan, then transfer to a wire rack. Serve warm or room temp.

🧊 Storage:

  • Fridge: Store in an airtight container for up to 5 days.

  • Freezer: Freeze individually wrapped for up to 2 months. Reheat in microwave or oven.

🔄 Variations:

  • Add chopped green onions, jalapeños, or bell peppers for extra flavor

  • Use pepper jack or mozzarella instead of cheddar

  • Swap sausage for bacon, ham, or a plant-based alternative
