Cozy Chicken & Mashed Potatoes
Ingredients
Chicken
- 4 chicken thighs or breasts
- Salt & pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tbsp olive oil or butter
Mashed Potatoes
- 2 lb potatoes (Yukon Golds are dreamy)
- Salt
- 4 tbsp butter
- ½–¾ cup warm milk or cream
- Pepper to taste
Instructions
- Mashed potatoes first
Peel (or don’t) and cube potatoes. Boil in well-salted water 15–20 minutes until fork-tender.
Drain, mash with butter, warm milk, salt, and pepper. Cover to keep warm. - Cook the chicken
Pat chicken dry. Season both sides with salt, pepper, garlic powder, and paprika.
Heat oil or butter in a skillet over medium heat.
Cook chicken 5–7 minutes per side (thighs a bit longer) until golden and cooked through. - Optional pan gravy (highly recommended)
Remove chicken, lower heat.
Add 1 tbsp butter + 1 tbsp flour to the pan, whisk 1 minute.
Slowly whisk in 1 cup chicken broth; simmer until thick. Season to taste. - Serve
Chicken on a bed of mash, gravy everywhere. Deep breaths of happiness.

- Crispy oven chicken: Roast at 425°F (220°C) for ~35–40 minutes
- Herby mash: Add roasted garlic or chives
