🍫 Chocolate-Covered Cheesecake Bites


🛒 Ingredients:

Cheesecake Base:

  • 16 oz (2 blocks) cream cheese, softened

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ¼ cup sour cream or heavy cream (for extra creaminess)

  • Optional crust: 1 cup graham cracker crumbs + 2 tbsp melted butter

Chocolate Coating:

  • 2 cups semi-sweet or dark chocolate chips (or melting chocolate)

  • 1 tbsp coconut oil or vegetable oil (for a glossy finish)

1. Preheat Oven:

  • Set oven to 325°F (160°C).

  • Line an 8×8-inch baking pan with parchment paper, leaving some overhang to lift out later.

2. (Optional) Make Crust:

  • Mix graham cracker crumbs and melted butter.

  • Press into the bottom of the pan.

  • Bake for 8 minutes, then set aside to cool.

3. Make Cheesecake Filling:

  • In a mixing bowl, beat cream cheese and sugar until smooth and fluffy.

  • Add eggs, one at a time, mixing well after each.

  • Add vanilla and sour cream, mixing just until combined (don’t overmix).

4. Bake:

  • Pour filling over crust (or directly into the pan if no crust).

  • Bake 30–35 minutes, until the center is set but still slightly jiggly.

  • Cool completely, then refrigerate for at least 4 hours or overnight.

5. Cut Into Bites:

  • Lift chilled cheesecake out of the pan using parchment.

  • Cut into 1-inch squares.

  • Freeze bites for 1 hour — this helps when dipping in chocolate.

6. Dip in Chocolate:

  • Melt chocolate and coconut oil in a microwave or double boiler (stir until smooth).

  • Using a fork or skewer, dip each frozen cheesecake square into melted chocolate.

  • Let excess drip off, then place on a parchment-lined tray.

7. Chill to Set:

  • Refrigerate or freeze for about 15–20 minutes until chocolate hardens.


🍬 Optional Toppings:

  • Drizzle with white chocolate

  • Sprinkle with crushed nuts, sea salt, or cookie crumbs

  • Add festive sprinkles for parties
