Chocolate-Covered Coconut Cream Balls
Ingredients:
For the Coconut Filling:

2 1/2 cups shredded sweetened coconut

1/2 cup sweetened condensed milk

1/4 cup powdered sugar

1 teaspoon vanilla extract

Pinch of salt
For the Chocolate Coating:

12 oz (about 2 cups) semi-sweet or dark chocolate chips (or chopped chocolate)

1 tablespoon coconut oil or vegetable shortening (for smoother coating, optional)
Instructions:
1. Make the Coconut Filling:

In a large bowl, mix together the shredded coconut, sweetened condensed milk, powdered sugar, vanilla extract, and salt.

Stir until well combined and the mixture holds together. If it’s too sticky to work with, refrigerate for 10–15 minutes to firm up.
2. Shape the Balls:

Scoop about 1 tablespoon of the mixture and roll into balls with your hands. You can also press them into ovals to resemble mini candy bars.

Place the shaped balls on a baking sheet lined with parchment or wax paper.

Chill in the freezer for at least 30 minutes so they’re firm for dipping.
3. Melt the Chocolate:

In a microwave-safe bowl, melt the chocolate and coconut oil in 20-30 second intervals, stirring in between, until smooth.

Alternatively, melt the chocolate using a double boiler on the stovetop.
4. Dip the Coconut Balls:

Using a fork or dipping tool, dip each chilled coconut ball into the melted chocolate, letting excess drip off.

Place back on the parchment-lined sheet.

Optional: Sprinkle a bit of shredded coconut on top before the chocolate sets for decoration.
5. Set the Chocolate:

Chill the dipped coconut balls in the fridge for 15–20 minutes, or until the chocolate is completely firm.
Storage:

Store in an airtight container in the fridge for up to 2 weeks, or freeze for longer storage.
Optional Add-ins or Variations:

Almond Joy style: Press a whole almond into the top of each coconut ball before dipping in chocolate.

White chocolate coating: Swap the semi-sweet chocolate for white chocolate for a different twist.

Unsweetened coconut: If using unsweetened coconut, increase the powdered sugar slightly for sweetness.
