🍮 Classic Chocolate Tart Recipe

Ingredients

For the Crust:

  • 1 ¼ cups all-purpose flour

  • ¼ cup unsweetened cocoa powder

  • ¼ cup sugar

  • ½ cup unsalted butter, cold and cubed

  • 1 egg yolk

  • 2–3 tbsp cold water

For the Chocolate Filling:

  • 1 cup heavy cream

  • 8 oz semisweet or dark chocolate, finely chopped

  • 2 tbsp unsalted butter

  • 1 tsp vanilla extract

  • Pinch of salt


🥣 Instructions

1. Make the crust

  1. In a food processor, combine flour, cocoa powder, and sugar.

  2. Add cold butter and pulse until mixture looks like fine crumbs.

  3. Add egg yolk and just enough water to bring dough together.

  4. Shape into a disk, wrap in plastic, and chill for 30 minutes.

2. Bake the crust

  1. Preheat oven to 350°F (175°C).

  2. Roll dough to fit a 9-inch tart pan. Press into the pan and trim edges.

  3. Prick the base with a fork, line with parchment, and fill with pie weights or beans.

  4. Bake 15 minutes, remove weights, and bake 5 more minutes. Let cool.

3. Make the filling

  1. Heat heavy cream in a saucepan until just steaming (not boiling).

  2. Pour over chopped chocolate and let sit 2 minutes.

  3. Stir until smooth, then add butter, vanilla, and salt.

4. Assemble

  1. Pour chocolate filling into cooled crust.

  2. Smooth the top and refrigerate 1 hour until set.

5. Serve

  • Garnish with whipped cream, sea salt flakes, berries, or chocolate curls.

  • Slice with a warm knife for clean edges.

  • Use good-quality chocolate — it’s the star of the show.

  • Add a tablespoon of espresso or liqueur (like Kahlúa or Baileys) to enhance flavor.

  • The tart can be made a day ahead and stored in the fridge.
