🥔 Classic Potato Salad

🛒 Ingredients:

3 lbs potatoes (Yukon Gold or red potatoes are best)

3 large eggs

1 cup mayonnaise

2 tbsp Dijon mustard

1/2 cup celery, finely chopped

1/2 cup red onion, finely chopped

2 tbsp sweet pickle relish (optional)

1. Cook potatoes:

Wash and cut potatoes into 1-inch chunks.

Boil in salted water until tender but not falling apart, about 12-15 minutes.

Drain and let cool completely.
2. Cook eggs:

Place eggs in boiling water for 10 minutes for hard-boiled.

Cool under cold water, peel, and chop.
3. Make the dressing:

In a large bowl, whisk together mayonnaise, mustard, vinegar, sugar, salt, and pepper.

Add cooled potatoes, eggs, celery, onion, and relish to the dressing.
