Classic potato salad coming right up! 🥔🥗 It’s creamy, tangy, and perfect for picnics, BBQs, or as a comforting side.

🥔 Classic Potato Salad

🍽️ Serves: 6–8

⏱️ Ready in: 45 minutes (including cooling)

🛒 Ingredients:

  • 3 lbs potatoes (Yukon Gold or red potatoes are best)

  • 3 large eggs

  • 1 cup mayonnaise

  • 2 tbsp Dijon mustard

  • 1/2 cup celery, finely chopped

  • 1/2 cup red onion, finely chopped

  • 2 tbsp sweet pickle relish (optional)

  • 2 tbsp apple cider vinegar or white vinegar

  • 1 tsp sugar

  • Salt & pepper, to taste

  • Paprika (for garnish)

  • Fresh parsley or chives, chopped (optional)

👩‍🍳 Instructions:

1. Cook potatoes:

  • Wash and cut potatoes into 1-inch chunks.

  • Boil in salted water until tender but not falling apart, about 12-15 minutes.

  • Drain and let cool completely.

2. Cook eggs:

  • Place eggs in boiling water for 10 minutes for hard-boiled.

  • Cool under cold water, peel, and chop.

3. Make the dressing:

  • In a large bowl, whisk together mayonnaise, mustard, vinegar, sugar, salt, and pepper.

4. Combine:

  • Add cooled potatoes, eggs, celery, onion, and relish to the dressing.

  • Gently mix until well combined.

5. Chill:

  • Refrigerate for at least 1 hour to let flavors meld.

6. Serve:

  • Sprinkle with paprika and chopped herbs before serving.

💡 Tips:

  • Use waxy potatoes (Yukon Gold or red) for the best texture.

  • Adjust mayo and mustard to your taste for creamier or tangier salad.

  • Add chopped pickles, bacon bits, or diced bell peppers for variations.
