📝 Ingredients (Serves 6–8)
For the meatloaf:

2 lbs ground beef (80/20 recommended)

1 small onion, finely chopped

1/2 green bell pepper, finely chopped (optional)

1 cup Ritz cracker crumbs (about 20 crackers, crushed)

1 cup shredded cheddar cheese

2 large eggs

1/2 cup milk
-
1 tsp salt
-
1/2 tsp black pepper
For the glaze:

1/2 cup ketchup

2 tbsp brown sugar
-
1 tsp mustard (optional)
👩🍳 Instructions
1. Preheat & prep:
Preheat your oven to 350°F (175°C). Grease a loaf pan or line a baking sheet with parchment.
2. Sauté veggies (optional but recommended):
In a skillet, sauté the chopped onion and bell pepper in a bit of oil until softened (about 5 minutes). Let cool slightly.
3. Mix the meatloaf:
In a large bowl, combine:

Sautéed veggies

Crushed Ritz crackers

Shredded cheddar cheese

Eggs
-
Milk
-
Salt & pepper
Mix gently until just combined — don’t overwork it.
4. Shape & bake:

Shape into a loaf and place in pan or on baking sheet.

Bake for 30 minutes, then remove and spread glaze on top.

Return to oven and bake an additional 25–30 minutes, or until internal temperature reaches 160°F (71°C).
5. Rest & slice:
Let rest for 10 minutes before slicing for clean cuts and juicier meat.
