Crawfish Fries

Ingredients:

  • 4 large russet potatoes (or frozen fries, your choice)

  • 1 cup cooked crawfish tails (drained if from a can)

  • 1 teaspoon Cajun seasoning

  • 1/2 teaspoon smoked paprika

  • Salt and pepper to taste

  • Oil for frying (if making fries fresh)

Instructions:

  1. Prepare fries: If using fresh potatoes, cut them into fries and soak in cold water for 30 minutes, then pat dry.

  2. Cook fries: Fry in hot oil (350°F/175°C) until golden and crispy. Or bake/fry frozen fries according to package instructions.

  3. Season fries: Toss the hot fries with Cajun seasoning, smoked paprika, salt, and pepper.

  4. Add crawfish: Gently fold in the cooked crawfish tails.


Creamy Queso Sauce

Ingredients:

  • 1 tablespoon butter

  • 1 tablespoon all-purpose flour

  • 1 cup milk (whole or 2%)

  • 1 cup shredded sharp cheddar cheese

  • 1/2 cup shredded Monterey Jack cheese

  • 1 small jalapeño, finely chopped (optional, for heat)

  • 1/4 teaspoon garlic powder

  • Salt to taste

Instructions:

  1. Make roux: In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until slightly golden.

  2. Add milk: Slowly whisk in milk, cooking until the mixture thickens.

  3. Add cheese: Stir in the cheddar and Monterey Jack cheese until melted and smooth.

  4. Add jalapeño and season: Stir in jalapeño, garlic powder, and salt. Adjust seasoning as desired.


To serve:

  • Pile the seasoned fries and crawfish on a plate.

  • Drizzle or serve the creamy queso sauce on the side for dipping.

  • Optional garnish: chopped green onions or fresh parsley.
