Creamy Chicken & Carrot Spread

Ingredients

  • 1 cup cooked chicken, very finely chopped or shredded
    (poached or roasted, breast or thigh)
  • 1 cup carrots, finely grated
  • 3–4 tbsp mayonnaise
  • 2 tbsp cream cheese or sour cream
  • 1 tsp Dijon or mild mustard
  • 1 small garlic clove, finely minced (optional)
  • Salt & white or black pepper to taste
  • Optional: squeeze of lemon juice or pinch of sugar

Instructions

  1. Cook the carrots (important!)
    Lightly steam or boil grated carrots until just tender.
    Drain very well and cool completely.
  2. Mix the base
    In a bowl, stir together mayonnaise, cream cheese (or sour cream), mustard, garlic, salt, and pepper.
  3. Combine
    Fold in chicken and carrots.
    Mix until smooth and spreadable.
  4. Adjust
    Taste and balance with lemon or a pinch of sugar if needed.
  5. Chill
    Refrigerate 30–60 minutes for best flavor.

Texture options

  • Chunky: hand-mix with finely chopped chicken
  • Ultra-smooth: pulse everything briefly in a food processor
  • Extra creamy: add 1–2 tbsp softened butter (very traditional!)

How to serve

  • On fresh bread or rolls
  • With crackers or rye bread
  • Stuffed into tea sandwiches
  • As a party spread with pickles on the side

Traditional add-ins (optional)

  • Finely chopped parsley
  • Pinch of sweet paprika
  • Tiny dice of pickle or celery for crunch
