🛒 Ingredients

For the Chicken:

  • 2 large boneless, skinless chicken breasts, sliced in half horizontally (or 4 cutlets)

  • Salt & pepper, to taste

  • 1 tsp Italian seasoning

  • 1/2 tsp paprika

  • 1 tbsp olive oil

  • 2 tbsp unsalted butter

For the Alfredo Sauce:

  • 3 tbsp butter

  • 4–5 garlic cloves, minced

  • 1 1/2 cups heavy cream

  • 1 cup grated Parmesan cheese (freshly grated is best)

  • Salt & pepper, to taste

  • Optional: 1/4 tsp nutmeg or red pepper flakes

For the Pasta:

  • 12 oz linguine, cooked al dente and drained (reserve 1/2 cup pasta water)


👨‍🍳 Instructions

1. Cook the Pasta:

  • Bring a large pot of salted water to a boil.

  • Cook linguine until al dente. Drain, reserving 1/2 cup of pasta water.


2. Season & Cook the Chicken:

  • Season chicken cutlets with salt, pepper, Italian seasoning, and paprika.

  • Heat olive oil and 2 tbsp butter in a large skillet over medium-high heat.

  • Sear chicken for 4–5 minutes per side, or until golden and cooked through (internal temp 165°F/74°C).

  • Remove and set aside to rest. Slice before serving.


3. Make the Garlic Butter Alfredo Sauce:

  • In the same skillet, reduce heat to medium.

  • Add 3 tbsp butter and minced garlic. Sauté for about 1 minute until fragrant.

  • Slowly pour in the heavy cream, whisking to combine.

  • Simmer for 4–5 minutes until it slightly thickens.

  • Stir in grated Parmesan cheese and whisk until smooth.

  • Add salt, pepper, and optional nutmeg or red pepper flakes.

  • If the sauce is too thick, loosen it with reserved pasta water (a little at a time).


4. Toss the Pasta:

  • Add cooked linguine to the Alfredo sauce and toss to coat evenly.

  • Simmer for 1–2 minutes to let flavors meld.


5. Assemble & Serve:

  • Top linguine with sliced chicken.

  • Garnish with extra Parmesan, chopped parsley, or a drizzle of garlic butter from the pan.

  • Extra garlicky? Add roasted garlic to the sauce for a deeper flavor.

  • Make it cheesy: Add mozzarella or asiago for a richer sauce.

  • Veggies: Toss in sautéed spinach, mushrooms, or sun-dried tomatoes.

  • Protein swap: Try shrimp, salmon, or grilled tofu instead of chicken.
