  • 1–2 large eggs

  • 1 tsp butter or oil

  • Salt and pepper, to taste

  • Optional extras: cooked bacon, ham, avocado, tomato slices, or spinach

  1. Prep the Croissant:
    Slice the croissant horizontally, leaving a hinge if you like it attached, or cut fully in half.

  2. Cook the Eggs:

    • Scrambled: Beat eggs with a pinch of salt and pepper. Melt butter in a small skillet over medium heat. Pour in eggs and cook, stirring gently, until just set.

    • Fried/Over-Easy: Heat butter in a skillet over medium. Crack eggs in and cook to your preferred doneness. Season with salt and pepper.

  3. Assemble the Sandwich:
    Place cooked eggs on the bottom half of the croissant.
    Add cheese immediately so it melts from the residual heat.
    Add any optional extras (bacon, ham, avocado, or veggies).
    Top with the croissant top.

  4. Optional: Melt the Cheese Further
    Place the assembled sandwich in a skillet over low heat, cover, and cook 1–2 minutes until the cheese is melty.

  5. Serve:
