Ahhh, crumb cake 🤍—simple, cozy, and dangerously snackable. Here’s a classic bakery-style crumb cake with that thick, buttery topping everyone fights over.


🍰 Classic Crumb Cake

Ingredients

Crumb Topping (the star ⭐)

  • 1½ cups all-purpose flour
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1½ tsp cinnamon
  • ¼ tsp salt
  • ¾ cup melted unsalted butter

Cake

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup sour cream (or Greek yogurt)

Instructions

  1. Heat oven to 350°F (175°C). Grease and line an 8×8-inch pan.
  2. Make crumbs: Mix flour, sugars, cinnamon, and salt. Stir in melted butter until large crumbs form. Set aside.
  3. Cake batter:
    Cream butter and sugar until fluffy. Beat in eggs and vanilla.
    Mix in sour cream.
    Fold in flour, baking powder, baking soda, and salt just until combined.
  4. Assemble:
    Spread batter evenly in pan.
    Sprinkle crumb topping generously—yes, it’s thick on purpose.
  5. Bake for 40–45 minutes, until a toothpick comes out clean (crumbs are okay).
  6. Cool slightly, then dust with powdered sugar if you’re feeling fancy.

🔥 Optional upgrades

  • Add a cinnamon swirl inside the cake
  • Swap in cardamom or nutmeg for warmth
  • Toss chopped walnuts or pecans into the crumbs
  • Drizzle with a vanilla glaze instead of powdered sugar
