Ingredients

  • 2 medium zucchini

  • ½ cup all-purpose flour (or use almond flour for low-carb)

  • 2 large eggs, beaten

  • ¾ cup panko breadcrumbs (for maximum crunch)

  • ¼ cup grated Parmesan cheese

  • 1 teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ½ teaspoon Italian seasoning (optional)

  • Olive oil spray or a drizzle of olive oil

Optional for dipping:

  • Marinara sauce

  • Ranch dressing

  • Garlic aioli


👩‍🍳 Instructions

  1. Preheat oven:
    425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Prep the zucchini:
    Wash and cut zucchini into sticks — about 3 inches long and ½ inch thick (like fries).

  3. Set up the coating station:

    • Place flour in one shallow bowl.

    • Beat eggs in a second bowl.

    • In a third bowl, mix panko, Parmesan, garlic powder, salt, pepper, and Italian seasoning.

  4. Coat the zucchini:

    • Dredge each stick in flour (shake off excess),

    • Dip into egg,

    Place coated sticks in a single layer on the baking sheet.

🔥 Air Fryer Option

  • Preheat air fryer to 400°F (200°C).

  • Arrange zucchini in a single layer (don’t crowd).

  • Air fry 8–10 minutes, shaking the basket halfway, until golden and crisp.
