1/4 cup white vinegar or apple cider vinegar

Salt & black pepper, to taste

1 tbsp fresh dill or parsley, chopped (optional)
-
Optional: sprinkle of feta cheese or crumbled bacon
👩🍳 Instructions:
-
Prep the vegetables:
Slice cucumbers, tomatoes, and onions. Place in a large bowl. -
Make the dressing:
In a small bowl, whisk together vinegar, olive oil, sugar (if using), salt, and pepper. -
Combine:
Pour dressing over the veggies. Toss gently to combine. -
Let it rest (optional but better):
Cover and refrigerate for 15–30 minutes to allow flavors to meld. Stir before serving. -
Garnish & serve:
Add chopped fresh herbs before serving, if desired. Serve cold or at room temp.
💡 Tips:
-
Use cherry tomatoes for less mess and great presentation.
-
English cucumbers or Persian cucumbers work great — no peeling needed.
-
Want to mellow the onion? Soak slices in cold water for 10 minutes before adding.
-
You can double the dressing and use leftovers as a quick marinade for chicken!
