👩🍳 Instructions
1. Make the custard cream
-
In a saucepan, heat milk until just simmering.
-
In a bowl, whisk sugar, cornstarch, and egg yolks until smooth.
-
Slowly pour hot milk into the egg mixture, whisking constantly.
-
Return mixture to saucepan and cook over medium heat, stirring constantly until thickened (about 5 min).
-
Remove from heat, stir in vanilla and butter.
-
Transfer to a bowl, cover with plastic wrap touching the surface to prevent skin. Chill until cold.
2. Prepare the donuts dough
-
In a bowl, dissolve yeast in warm milk with a pinch of sugar. Let sit 5–10 min until foamy.
-
Add sugar, melted butter, egg, salt, and flour gradually. Knead until soft and elastic (~8 min).
-
Cover and let rise in a warm place for 1 to 1.5 hours, until doubled.
3. Shape and fry donuts
-
Roll dough to ½-inch thickness. Cut out circles with a 3-inch cutter.
-
Place on a baking sheet, cover and let rise 30 min.
-
Heat oil in a deep pot to 350°F (175°C). Fry donuts in batches, 1–2 minutes per side, until golden. Drain on paper towels.
4. Fill donuts
-
Fill a piping bag fitted with a long narrow tip with custard cream.
-
Poke a hole in the side of each donut and fill until you feel resistance.
-
Repeat with Nutella for some donuts.
