🍋🥤 Easy Lemon 7UP Cake
🧾 Ingredients
For the Cake:
-
1 box lemon cake mix (15.25 oz)
-
1 box instant lemon pudding mix (3.4 oz)
-
4 large eggs
-
3/4 cup vegetable oil
-
3/4 cup 7UP (not diet — regular soda works best)
For the Glaze:
-
1 cup powdered sugar
-
2–3 tbsp lemon juice (freshly squeezed or bottled)
-
1 tbsp 7UP (optional, for extra fizz)
-
Optional: 1 tsp lemon zest for added brightness
🔪 Instructions
1. Preheat the oven:
Preheat to 325°F (163°C).
Grease and flour a Bundt pan (or use baking spray with flour).
2. Mix the cake:
In a large bowl, combine:
-
Lemon cake mix
-
Lemon pudding mix
-
Eggs
-
Oil
-
7UP
Whisk or beat until smooth and well-combined (about 2 minutes). Don’t overmix.
3. Bake:
Pour batter into the prepared Bundt pan.
Bake for 45–55 minutes, or until a toothpick inserted comes out clean.
Let cool in the pan for 10–15 minutes, then carefully invert onto a cooling rack or plate.
4. Make the glaze:
Whisk together powdered sugar, lemon juice, and 7UP (if using) until smooth and pourable.
Adjust thickness with more juice or sugar as needed.
5. Glaze the cake:
Once the cake has mostly cooled, drizzle the glaze over the top.
Let it set before slicing (or not — we won’t tell).
🍽️ Serve With:
-
Fresh berries
-
Whipped cream
-
A dusting of powdered sugar
📝 Tips & Variations:
-
Want it from scratch? Use all-purpose flour, sugar, and fresh lemon juice — I can help with a scratch version too.
-
No Bundt pan? Use a 9×13-inch pan — reduce baking time to 35–40 minutes.
-
Extra lemony? Add 1 tsp lemon extract or more zest to the batter.
Would you like a from-scratch version, a gluten-free option, or a layer cake version next?
