Easy Pecan Pie Bars

You’re going to love these — Easy Pecan Pie Bars deliver all the gooey, nutty, buttery goodness of classic pecan pie, but in a simple, sliceable bar form. Perfect for holidays, potlucks, or a cozy dessert anytime!


🥧 Easy Pecan Pie Bars

🍽️ Makes: 16 bars

⏱️ Ready in: ~1 hour (includes cooling time)


🛒 Ingredients:

For the Crust:

  • 1 cup (2 sticks) unsalted butter, melted

  • 2/3 cup brown sugar, packed

  • 2 2/3 cups all-purpose flour

  • 1/2 tsp salt

For the Pecan Filling:

  • 3 large eggs

  • 1 cup light corn syrup

  • 1 cup brown sugar, packed

  • 2 tbsp melted butter

  • 1 tsp vanilla extract

  • 2 cups pecan halves (or chopped, if you prefer bite-sized)


👩‍🍳 Instructions:

1. Preheat the oven to 350°F (175°C).

Line a 9×13-inch baking pan with parchment paper or lightly grease it.


2. Make the crust:

  • In a bowl, mix melted butter, brown sugar, flour, and salt until a crumbly dough forms.

  • Press evenly into the prepared pan to form the base.

  • Bake for 15–18 minutes, until lightly golden.


3. Prepare the filling:

  • In a separate bowl, whisk together eggs, corn syrup, brown sugar, melted butter, and vanilla until smooth.

  • Stir in the pecans.


4. Assemble & bake:

  • Pour the pecan filling over the hot crust.

  • Return to oven and bake for 25–30 minutes, or until the filling is set and golden brown.


5. Cool completely:

  • Let cool at room temperature for at least 1 hour before slicing into bars.

  • For cleaner cuts, refrigerate for 30 minutes after cooling.


🧊 Storage:

  • Store in an airtight container at room temp for 3–4 days

  • Or refrigerate for up to a week

  • These bars also freeze beautifully (wrap well and freeze for up to 2 months)


💡 Optional Twists:

  • Add a splash of bourbon for a Southern kick

  • Mix in a handful of mini chocolate chips for a rich twist

  • Use maple syrup instead of corn syrup for deeper flavor
