Ingredients (Serves 4)

Filling

  • 2 cups cooked shredded chicken

Sauce

  • 1 cup sour cream (or Mexican crema)
  • 1 cup green salsa (salsa verde)
  • 1/2 cup chicken broth
  • 1/2 cup grated cheese (Monterey Jack or Chihuahua cheese)
  • Optional: 1 tablespoon lime juice for brightness

Other

  • 8–10 corn tortillas
  • Additional grated cheese for topping
  • Fresh cilantro for garnish

Instructions

1️⃣ Prepare the Sauce

  1. In a bowl, mix green salsa, sour cream, and chicken broth until smooth.
  2. Add grated cheese and stir. Set aside.

2️⃣ Fill the Tortillas

  1. Lightly warm tortillas to make them pliable.
  2. Place a portion of shredded chicken and onions in each tortilla.
  3. Roll tortillas tightly and place seam-side down in a greased baking dish.

3️⃣ Add Sauce and Cheese

  1. Pour the sour cream–salsa mixture evenly over the rolled enchiladas.
  2. Sprinkle additional cheese on top.

4️⃣ Bake

  • Bake in a preheated oven at 350°F (175°C) for 20–25 minutes, until the cheese is melted and bubbly.

5️⃣ Serve

  • Garnish with fresh cilantro and a few slices of avocado if desired.
  • Serve hot with rice or beans on the side.

  • Slightly fry tortillas before filling to prevent sogginess.
  • Use leftover rotisserie chicken for convenience.
  • For extra flavor, add a pinch of cumin or garlic powder to the filling.
