Ingredients

3 tbsp Everything Bagel seasoning (store-bought or homemade — mix sesame seeds, dried garlic, onion, poppy seeds, and salt)

4 oz cream cheese, softened
Instructions
1. Make the dough

In a large bowl, mix warm water, sugar, and yeast. Let sit for 5 minutes, until foamy.

Add flour and salt; mix until a soft dough forms.

Knead for about 5–7 minutes (by hand or mixer) until smooth and elastic.

Cover and let rise for 45–60 minutes, or until doubled in size.
2. Shape the bits

Punch down dough and divide into 20–24 small pieces (about 1½ inches each).

Optional filling: Flatten each dough piece slightly, place ½ tsp cream cheese in the center, then pinch and roll into a sealed ball.

If not filling, just roll into smooth balls.
3. Boil

Bring 6 cups of water and baking soda to a gentle boil.

Drop in a few dough balls at a time and boil for 30 seconds per side.

Remove with a slotted spoon and place on a parchment-lined baking sheet.
4. Top & bake

Brush each ball with egg wash.

Sprinkle generously with Everything Bagel seasoning.

Bake at 400°F (200°C) for 14–16 minutes, or until golden brown.
5. Serve warm
