Here’s a simple, cheesy, and flavor-packed recipe for Fajita Chicken Casserole — all the deliciousness of chicken fajitas baked in one easy dish. It’s great for busy weeknights and perfect for low-carb or keto-friendly meals too!


🌶️🧀 Fajita Chicken Casserole

🧂 Ingredients:

  • 2–3 cups cooked chicken, shredded or chopped
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 1 cup sour cream (or plain Greek yogurt)
  • 1 (8 oz) package cream cheese, softened
  • 1½ cups shredded cheddar or Mexican blend cheese
  • 1 packet fajita seasoning (or homemade – see below)
  • 2 tbsp olive oil
  • Optional toppings: sliced jalapeños, green onions, fresh cilantro, lime wedges

🌶️ Homemade Fajita Seasoning (optional):

  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Pinch of cayenne (optional)

🍳 Instructions:

1. Preheat Oven:

  • Preheat to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

2. Sauté the Veggies:

  • In a large skillet, heat olive oil over medium-high heat.
  • Sauté sliced peppers and onions for about 5–7 minutes until just tender.
  • Remove from heat.

3. Mix the Base:

  • In a large bowl, mix softened cream cheese, sour cream, and fajita seasoning until smooth.
  • Stir in the cooked chicken and sautéed veggies.

4. Assemble the Casserole:

  • Spread the chicken mixture into the baking dish.
  • Sprinkle shredded cheese evenly on top.

5. Bake:

  • Bake uncovered for 25–30 minutes, or until hot and bubbly.
  • Broil for 2–3 minutes at the end for a golden cheesy top, if desired.

6. Serve:

  • Let cool for a few minutes, then top with jalapeños, green onions, cilantro, or a squeeze of lime.

🧊 Storage:

  • Store leftovers in the fridge for up to 4 days.
  • Reheat in the oven or microwave. Freezes well for up to 2 months.

🌮 Serving Ideas:

  • Spoon into warm tortillas
  • Serve over rice or cauliflower rice
  • Add avocado or guacamole on the side
  • Top with tortilla strips or crushed chips for crunch
