🧾 Ingredients

Serves 4–6

  • ½ lb (≈225 g) ground beef

  • 2 medium potatoes, peeled and diced

  • 1 small onion, chopped

  • 2 garlic cloves, minced

  • 7 oz (≈200 g) fideo pasta (or broken vermicelli / thin spaghetti)

  • 1 large tomato, chopped (or 1 cup tomato sauce)

  • 4 cups (≈1 L) water or beef broth

  • 1 tsp bouillon or 1 cube (beef or chicken)

  • ½ tsp oregano

  • Salt and pepper, to taste

  • 2 tbsp oil for frying

Optional:

  • 1 jalapeño or serrano pepper (for mild heat)

  • Fresh cilantro or lime for garnish

1. Toast the fideo

  • Heat 1 tbsp oil in a large skillet or pot over medium heat.

  • Add the fideo noodles and stir constantly until golden brown (about 2–3 minutes).

  • Remove and set aside. (This step gives the noodles their nutty flavor.)

2. Cook the beef

  • In the same pot, add another spoon of oil.

  • Add ground beef, season with salt and pepper, and cook until browned (about 5–6 minutes).

  • Add onion and garlic, cook another 2–3 minutes until fragrant.

3. Add potatoes and sauce

  • Stir in the diced potatoes and cook 2 minutes.

  • Add the chopped tomato (or tomato sauce), oregano, and bouillon.

  • Pour in the water or broth and bring to a gentle boil.

4. Add noodles

  • Stir in the toasted fideo noodles.

  • Reduce heat to medium-low, cover, and simmer about 10–12 minutes until noodles and potatoes are tender and most of the broth is absorbed.

5. Taste and serve

  • Adjust seasoning with salt and pepper.

  • Serve hot with a sprinkle of cilantro or squeeze of lime.


🍲 Tips

  • Texture: Add extra broth if you prefer a soupy version (“sopa de fideo con carne”).

  • Spice: Add jalapeño slices or red chili flakes if you like a kick.

  • Protein Swap: Ground turkey or chicken works just as well.

  • Shortcut: Use canned tomato sauce if you don’t want to blend fresh tomatoes.
