Flourless Banana Bread

Love it — Flourless Banana Bread is a moist, dense, naturally gluten-free twist on the classic. Perfect if you’re out of flour or want something a bit healthier and packed with banana flavor!


🍌 Flourless Banana Bread

🍽️ Makes: 1 small loaf (8×4 inch)

⏱️ Time: 10 min prep + 45 min baking


🛒 Ingredients:

  • 3 large ripe bananas, mashed

  • 3 large eggs

  • 1/2 cup natural peanut butter (or any nut/seed butter)

  • 1/4 cup honey or maple syrup

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • 1/2 tsp cinnamon (optional)

  • Pinch of salt

  • Optional mix-ins: 1/3 cup chopped nuts, chocolate chips, or raisins


👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.

  2. Mix wet ingredients:
    In a large bowl, whisk eggs, mashed bananas, peanut butter, honey, and vanilla until smooth.

  3. Add dry ingredients:
    Stir in baking soda, cinnamon, and salt until combined. Fold in any optional mix-ins.

  4. Bake:
    Pour batter into the prepared pan. Bake for 40–50 minutes, until a toothpick inserted comes out mostly clean (a few moist crumbs are okay).

  5. Cool:
    Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.


🍽️ Serving ideas:

  • Spread with extra peanut butter or cream cheese

  • Serve warm with yogurt or fresh fruit

  • Slice and toast for breakfast


💡 Tips:

  • Use super ripe bananas for maximum sweetness and moisture.

  • Nut butter adds richness and binds the loaf since there’s no flour.

  • Store covered at room temp or refrigerate for up to 3 days.
