Ah, fluffy buttermilk beignets — those pillowy, golden pillows of fried dough dusted with powdered sugar that make any morning feel like a celebration! Here’s a classic recipe that’ll bring that New Orleans magic right to your kitchen.


🍩 Fluffy Buttermilk Beignets

Makes: About 12–15 | Prep Time: 15 mins | Rise Time: 1.5 hours | Cook Time: 15 mins


🛒 Ingredients:

  • 2 ¼ tsp active dry yeast (1 packet)

  • 1 ½ cups warm water (about 110°F/43°C)

  • ½ cup granulated sugar

  • 1 cup buttermilk, room temperature

  • 2 large eggs

  • 1 tsp vanilla extract

  • 4 cups all-purpose flour, plus more for dusting

  • 1 tsp salt

  • Vegetable oil, for frying (about 3 inches deep)

  • Powdered sugar, for dusting


👩‍🍳 Instructions:

1. Activate Yeast

  • In a large bowl, dissolve yeast in warm water. Let it sit 5–10 minutes until foamy.

2. Mix Wet Ingredients

  • Stir in sugar, buttermilk, eggs, and vanilla extract.

3. Add Dry Ingredients

  • In a separate bowl, whisk flour and salt. Gradually add to wet mixture, stirring to form a sticky dough.

4. Knead & Rise

  • Turn dough onto a floured surface and knead for about 5 minutes until smooth and elastic.

  • Place in a greased bowl, cover with a damp cloth or plastic wrap, and let rise in a warm place for about 1 to 1.5 hours, until doubled in size.

5. Roll & Cut

  • Punch down the dough and roll it out to about ¼-inch thickness on a floured surface.

  • Cut into 2-inch squares or rectangles.

6. Heat Oil & Fry

  • Heat oil in a deep pot or fryer to 350°F (175°C).

  • Fry beignets in batches, flipping once, until golden and puffed — about 2–3 minutes per side.

7. Drain & Dust

  • Remove with a slotted spoon and drain on paper towels.

  • Generously dust with powdered sugar while still warm.


🍽️ Tips:

  • Keep an eye on oil temp — too hot and beignets brown too fast without cooking inside.

  • For extra fluffiness, don’t overwork the dough.

  • Serve with café au lait or your favorite dipping sauce!
